Chocolate Chip Cookies

Blair and I decided we wanted to bake something together today. So what better then a classic like chocolate chip cookies. These cookies are crispy on the outside and soft and chewy on the inside.

Chocolate Chip Cookies


1/2 cup butter, softened*
1/2 cup organic coconut oil, softened not liquid*
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
3 cup all-purpose flour
1 teaspon baking soda
2 teaspoons hot water
1/4 teaspoon salt
2 cups chocolate chips

Directions

1. Preheat oven to 350 degrees F
2. With a mixer cream together the butter, coconut oil, white sugar and brown sugar until smooth.
   Beat in the eggs one at a time, then blend in the vanilla. Dissolve baking soda and salt in the hot  water and add to batter. Mix in flour and chocolate chips. Drop by spoonfuls onto parchment paper
 lined baking sheet.
3. Bake for about 10 minutes in the preheated oven. Be careful not to over bake.

*you can replace the coconut oil and use all butter in this recipe if you prefer, I like the aroma and the flavour the coconut oil gives to the cookies.
